peasant bread
I made my best loaf of bread EVER today and yes, the picture is actually the one I baked before it got devoured. I followed this recipe in Mother Earth News. It takes patience but has only four ingredients! It is easy (no knead)and very pleasing. It's got a nice chewy crust and moderately spring inside. My attempts have usually been too dense to ever get baked right through.
My apologies for the pain this may cause my beloved family members that I can't make this for. For those who can and have been intimidated by baking your own, I encourage you to give this recipe a try.
Update: The recipe worked well with a spelt/rice flour combo but not so much as a gluten free bread. The crust was nearly impenetrable and the inside seemed done but had a very odd texture.

Alright then, the bread looks great, but what would the four ingredients be? The last bread I baked had a gazillion ingredients (but it was gluten free and quite delicious). Mom
Flour, yeast, water, salt. That's it! I mixed it in the evening and let it sit for ~15 hours. You turn it over twice and let it rise again for 1-2 hours. Then it bakes in a pre-heated casserole dish in a very hot oven. THere are more details but that's the basic recipe.

Sorry Michelle, now it's been weeks again since I've posted (or checked the site for that matter!). We'll see what the new year brings...I have dreams for this little blog.
My husband has been obsessed with that recipe ever since it appeared in the NY Times. We've had a zillion variations, sometimes several loaves per week. My favorite is a variation with about 2/3 whole wheat flour. Second favorite: all white flour, with dried cherries and chocolate chips!
Guess our gluten free version over Christmas needs a little more tweaking. Maybe it was more about the timing of the baking, because the flavour was great. Thanks for the effort Tan. Mom
This recipe is worth being obsessed about, in my opinion. I got a little braver today and did 2cups whole wheat, 1/2 white and 1/2 ground flax. Loved it. That chocolate chip and cherry one sounds decadent, I must try that sometime for a treat.
Mom, if you think it's worth the effort I'd be happy to keep playing with it. I suspect you have other recipes that have been more satisfying though!
